I’m all about making things easy during the week. By the time I’m done with work for the day, the last thing I want to do is make more work for myself. I’d rather spend the free time I have relaxing with my boys, working out, taking a walk or catching up on miscellaneous things.

Recently, one thing that has REALLY made our lives easy when it comes to dinner is Blue Apron. Nick and I love to cook, but with both of our busy schedules (which I’m sure many of you have!), finding time to not only make a meal, but come up with a recipe and grocery shop doesn’t always happen. And when it doesn’t, we end up resorting to take out or something that probably isn’t that healthy.

With Blue Apron, we get a delivery every week that includes fresh ingredients to make 3 healthy (under 700 calories) and delicious recipes for the two of us. It’s the perfect balance so we still feel free to do whatever we want the other 4 nights. We also get a step by step recipe card (with pictures!) so there is literally no need to think when we get home – we know exactly what we’re making and have all the ingredients we need waiting for us.

I highly recommend giving it a shot, we’ve convinced a lot of our friends to check it out and they love it. Blue Apron has gotten us to try so many new things that we never thought of making before, including sweet potato vermicelli (pictured above), fresh beet pasta, salmon roll sandwiches, and a TON more.
